You have extra damage and healing built into your character through the passive Virtues (Justice, Resolve, Courage) that all Guardians get by default in the first 20 levels.
It's not nearly as strict as 'hard trinity' games where for example only 1 or 2 classes can heal, they can only be healers and you will not survive without at least 1 of them, but my understanding is raids are designed to require a variety of professions - you probably couldn't complete them with all warriors or all mesmers for example.
Tempered Spinal Blades, as you mentioned in your post, requires a Gift of Blades to be crafted, which requires you to have maxed one of the armor crafting professions. Mawdrey will require you to have a Lesser Vision Crystal which is most easily obtained by crafting (either directly or via the Exotic Equipment collection), but can be obtained
. First you can play all professions in every gamemode. The important part is your build/gear and not the profession. At the end you will multiclass anyway, if you want to do best in each gamemode.

GW2Efficiency doesn't do anything shady to get it's data. It gets its data through the official GW2 API. This means that it won't have any access to any important data such as passwords. The account you make on GW2Efficiency isn't linked at to the GW client so you can make completely different username and password.
Edit: I am just a student. School, workout and freetime..sorry lol. There's no rule against having more than 1 account. You can only play one at a time - if you're controlling 2 characters on 2 different accounts at the same time that's botting and can get you banned.
